Style over substance, sadly, at this art-heavy restaurant - the dishes aim for innovation, but most miss the mark and are incredibly expensive to boot. Drop in for drinks instead, to take in the ambiance.

Les gougonettes — deep-fried French lemon sole (HK$170) — was like a dish you'd get in a bar. Australian lamb with pan-fried polenta and spring vegetables (HK$290 for small) was average.

If we could, we would give five stars to this joint just for the ambience alone. But, with the food, though the presentation is luxurious and the ingredients are mostly superb, the execution doesn’t really live up to expectations – and the dishes are a pretty penny to boot.

We feel that the pricing for some of the dishes to be a little curious, and even a drink at the bar with a snack would relieve you of at least HK$500-600 a head. Still, the entire experience is a worthwhile one, and the high standard of food and service means very little of that money is ill spent.

Despite those cooler-than-thou vibes and a few overpriced dishes, Bibo is perfect for special occasions or paydays—whichever comes first.

Bibo’s classic French menu advocates the sharing approach, so expect to order 4-5 dishes for a sociable experience that could feature seared Saint Jacques scallops served with fresh pesto or indulgent foie gras on a bed of rhubarb poached in grenadine.

Your credit card will not have the same enthusiasm as you and your patient won't neither. Indeed, the time to wait for a table can be very very long.

The egg itself is a beautiful orange colour, but the flavour is not very deep. The dish in general verged on the bland, apart from a few grains of large sea salt, which made that particular mouthful painfully salty.

The look and feel of Bibo is genuinely a revelation, doing something brave and wholly original in allowing people to dine amongst a serious collection of heavyweight contemporary art.

Every course was beautifully presented and bursting with unique and delicious flavour fusions. Favourites included the sweet Japanese scallop, the Hokkaido sea urchin paired with caviar, and the melt in your mouth filet mignon.

L’Oeuf is one of the signature dishes at Bibo with the famous Japanese Taiyouran organic egg slowly cooked at 64 degrees paired with thick and creamy polenta, crunchy cashews and dotted Szechuan pepper crumbs.

Although prices are a little steep (most dishes are around the $200-400 mark, whilst the degustation menu costs $1,688 per head), you won’t be disappointed stepping into this dining gallery if you enjoy sipping on long pours and love art as much as the owners do.
