Exactly what Hong Kong needed: a classic steak-frites bistro with prices similar to those in France. And thankfully, their steaks are pretty damn great, too.

It’s Chef de Cuisine Tony Ferreira’s “secret” house sauce that was the most highly anticipated, and while it was tasty, it was also a bit too tart and tangy for our taste buds – we (gasp) actually preferred the flavoursome slices unadorned or with a bit of Dijon-style mustard on the side.

​We started with the classic French dessert tarte tatin but sadly, La Vache’s version was ridiculously sweet; Rach and I both had one bite and called it a day immediately.

The restaurant features worn red-leather banquettes, oak wall paneling and brass fixtures are reminiscent of beloved old bistros along the Left Bank in Paris.

The frites are free flowing and delicious, though I couldn’t be certain that they’re homemade. The sauce is slightly heavy on the vinegar and, I felt, detracted from the buttery, richness of the steak, but others seemed to love it.

If you’re familiar with beef cuts, you know the Rib-eye will have some fat, perhaps a little tendon and maybe some gristle on the edge. That’s why it’s a flavourful cut. Connoisseurs will also know there are much better grades of meat than USDA.

Rib steaks all round, as many fries as you can manage and béarnaise sauce to accompany it. We will say that the sauce still needs a bit of improvement- which we're sure it will over time.

Your steak, a gorgeous cut of rib-eye, cooked just how you like it, is pre-sliced in the kitchen. The staff serve two thirds of the meat, keeping the final third in the centre of the table, above a tealight candle to keep it warm.
