Like many Aqua Group restaurants, opinions are torn on this one: the setting is gorgeous, the staff fairly incompetent, the food not half-bad, the prices decent - and the entire concept, unsustainable, but it'll probably last.

Also good was the signature 24-hour boneless oxtail (HK$158), which had textbook-perfect soft, tender meat. Chunks of house-made chorizo (HK$88) were dense, meaty and slightly spicy.

 It’s all relaxed and underground, with a cheeky-chic edge and with the restaurant sporting a slightly rustic feel to complement its ‘tapas y musica’ concept.

 While this is a fair price to pay on Wyndham Street, we feel that the food could have been more consistent and the service more polished to warrant the cost. If both improve, this could be a Central dining spot to return to.

Tapas in Hong Kong have a reputation for being small, expensive plates of food. We wouldn’t have mind paying the price we did, if it had been better. The Aqua group has an awesome space here, but we’re not convinced that a tapas restaurant is the best use for it.

Our last (savoury) dish was the “Secreto Iberico”, acorn-fed pork with chickpea puree and confit piquillo pepper. On its arrival, Chef Marc announced, “I am really in love with this dish!” – and we definitely agreed, even if we felt it would have benefitted from just a little more of the confit pepper.

 The pork belly was very satisfying, with a crispy skin and tender, juicy meat underneath. A tart flavour in the sauce nicely cut through the pork belly’s fattiness.

We couldn't get enough of the homemade chorizo and their creamy Iberico ham croquettes.  Main courses came in the form of juicy, tender secreto Iberico pork and suckling pig with the crispiest melt in your mouth skin.

A favorite of mine was the sizzling platter of the home-made Chorizo, it came doused in a savory sauce that enhanced the freshness of the meat. It was such a delight!

For seafood lovers, you can't go wrong with garlic chili prawns and the octopus sitting on a bed of foamy mash potato. But the dish that really struck our taste buds were the razor clams with parsley, garlic and lemon, so juicy with that beautiful lightly seared flavor
